Inside Out Mango
Lay the mango on its flattest side on a cutting board.
Press down with the palm of one hand on top of the mango, and with a long-bladed knife carefully slice off the top half of the mango with a horizontal cut about 1/2 inch above the center, which will clear the large fibrous pit.
Turn the mango over and similarly slice off the other half.
Score the juicy flesh of each half in a crisscross fashion, taking care not to pierce the skin.
Gendy turn each half of the mango inside out.
Sprinkle with lime juice and serve immediately.
Fresh mango cut this way may be eaten with a knife and fork, or by picking it up with your hands and biting the chunks of fruit from the skin.
