Crema de Mango
|Blanched almonds||1 Cup (16 tbs)|
|Oranges||2 , peeled, white membrane removed and seeded|
|Ripe mangoes/2 cans, 15 ounce each, drained||5 Large, drained|
|Sugar||1⁄4 Cup (4 tbs)|
|Lemon juice||1 Tablespoon|
|Whipping cream||2 Cup (32 tbs)|
Using metal blade, process almonds with on-off bursts until coarsely chopped; set aside.
Section oranges; cut sections in half and set aside.
Peel mangoes, cut into pieces, and process until mashed.
Transfer to a bowl.
Add sugar to taste (up to 1/4 cup).
Stir in orange pieces and lemon juice.
Whip cream and fold into mango mixture; add almonds.
Pour into large bowl or individual dishes and garnish with cherries, if desired.
