Pork Mango Saute

Ingredients
  Pork 1 Pound (Shoulder / Fresh Ham Hock)
  Lime juice 4 Tablespoon
  Salt 1 Teaspoon
  Black pepper To Taste
  Mangoes 2 Pound (4 Small Ones)
  Coarsely chopped peanuts 1 Cup (16 tbs)
  Peanut oil 3 Tablespoon
  Garlic 2 Clove (10 gm), minced
  Green onions 4 , thinly sliced
Directions

Cut pork into strips approximately 1/4 inch thick and 1/2 inch wide.
Add half the lime juice, salt and pepper to pork and marinate for 30 minutes.
Peel and slice mangoes.
Add remaining lime juice, salt and pepper and marinate for 30 minutes.
Saute peanuts in peanut oil, lightly, just until golden.
Remove from pan and drain on paper towel.
In the same pan, saute garlic and green onions for 3 minutes or so, adding more oil if necessary, and stir constantly.
Add marinated pork strips and cook until the meat is no longer pink.
Layer the marinated mango slices over the cooking pork, cover the pan and turn down heat.
Simmer for 5 to 10 minutes or until pork is thoroughly cooked.
Garnish with the peanuts and serve with baked yams or brown rice.
