Macaroni And Cheese

Ingredients
  Macaroni 1 1⁄2 Cup (24 tbs)
  Salt 1⁄2 Teaspoon (Leveled)
  Pepper 1⁄8 Teaspoon (Leveled)
  Butter/Margarine 3 Tablespoon (Leveled)
  Paprika 1 Dash
  Milk 1 1⁄2 Cup (24 tbs)
  Flour 3 Tablespoon (Leveled)
  Grated cheese 1 1⁄2 Cup (24 tbs)
Directions

Cook the macaroni as directed on p. 62 and drain.
Melt fat in top of double-boiler, add flour and seasonings and blend thoroughly.
Pour in milk and stir until thick and smooth.
Cook for 5 min. longer, then add 1 cup grated cheese and stir until all is melted.
Put 1/2 of macaroni in greased baking dish, cover with 1/2 the sauce and 1/4 cup of grated cheese.
Repeat, using remaining ingredients.
Sprinkle buttered crumbs on top and bake in a moderate oven of 375° F.for 20 min. or until well browned.
