Macaroni Nicoise

Ingredients
  Anchovy fillets 3
  Tomatoes 3⁄4 Pound
  Garlic 1 Clove (5 gm)
  Rigatoni pasta 3⁄4 Pound
  Salt To Taste
  Butter 1⁄4 Cup (4 tbs)
  Grated parmesan cheese 1⁄2 Cup (8 tbs)
  Chopped fresh basil 1 Tablespoon
Directions

GETTING READY
1) Chop the anchovies.
2) Blanch, peel and cut tomatoes into thin slices.
3) Cook the rigatoni in a large saucepan of boiling salted water till just tender.
4) When cooked, drain in colander.
5) Peel and crush the garlic.

MAKING
6) In a serving bolw, place with the anchovies garlic.
7) In a saucepan, melt butter and when frothy, add rigatoni and toss well.
8) Add to the tomatoes and garlic, toss, sprinkle with Parmesan and basil.

SERVING
9) Serve the Macaroni nigoise immediately with crusty bread.
