3 Ingredient Macaroni And Cheese
|Gemelli/Fusilli / other corkscrew pasta||2 Cup (32 tbs)|
|Cream cheese||6 Ounce, softened|
|Shredded cheddar cheese/Cheddar jack cheese||1 3⁄4 Cup (28 tbs)|
|Freshly ground black pepper||To Taste|
1. Heat oven to 400°F. In a large saucepot over high heat, bring 2 quarts water to boiling. Add salt to taste and the pasta. Cook, stirring often, 6 minutes. Transfer 1 cup of cooking water to a medium bowl, add softened cream cheese, and whisk until smooth. Continue cooking pasta until al dente, 4 to 5 minutes longer.
2. Drain pasta and return it to the saucepot. Add the cream cheese mixture and 1 1/4 cups cheese and stir until smooth. Season with salt and pepper and transfer to a 9-inch-square glass baking dish. Sprinkle remaining 1/2 cup cheese on top.
3. Bake casserole until macaroni is heated through and cheese is golden, about 20 minutes.
