Macaroni Superb A La Holstein
|Elbow macaroni||4 Ounce (1 Cup, Uncooked)|
|Minced onion||1⁄4 Cup (4 tbs)|
|Minced green pepper||1⁄4 Cup (4 tbs)|
|Butter||1⁄4 Cup (4 tbs)|
|All purpose flour||1⁄4 Cup (4 tbs) (Unsifted)|
|Milk||2 Cup (32 tbs)|
|Dried beef||4 Ounce, shredded (1 Package)|
|Chopped pimientos||2 Ounce, drained (1/4 Cup Or 1 Jar)|
|Prepared mustard||1 Tablespoon|
|White pepper||1⁄4 Teaspoon|
|Poached eggs||6 Small|
Cook macaroni according to package directions; drain.
Meanwhile, saute onion and green pepper in butter until onion is tender, but not brown.
Blend in flour.
Gradually add milk.
Cook, stirring constantly, until thickened.
Add cooked macaroni and remaining ingredients except eggs; mix well.
Pour into buttered 1 1/2-quart baking dish.
Bake, covered, at 350° 25 to 30 minutes.
Top individual servings with poached eggs, if desired.
