Baked Low Carb Tofu Macaroni And Cheese

This macaroni and cheese recipe is so delicious that your friends and family will be greatly impressed.
Ingredients
  Firm tofu 12 Ounce
  Mexican cheese 8 Ounce, shredded (1 Package)
  Whole egg 1 , beaten
  Egg whites 2 , beaten
  Fat free evaporated milk 1⁄4 Cup (4 tbs)
  Onion 1⁄2 Large, chopped
  Cayenne pepper 1 Dash
  Garlic 3 Clove (15 gm), minced
  Prepared mustard 1⁄2 Teaspoon
For topping
  Paprika To Taste
  Parmesan cheese 1⁄4 Cup (4 tbs)
Directions

1 Place the Tofu in a strainer and squeeze out any excess water.
2. In a saucepan saute the onions and garlic for about 5 minutes until soft.
3. Mash tofu well, leaving a few chunky pieces.
4. Mix all the remaining ingredients together.
5. Top with 1/4 Parmesan cheese and paprika.
6. Bake at 350 degrees for 45 minutes ( top should be slightly brown)
