Zucchini And Tomatoes With Macaroni
|Chopped green pepper||1 Cup (16 tbs)|
|Finely chopped onions||1⁄2 Cup (8 tbs)|
|Garlic||1 Clove (5 gm), minced|
|Butter/Regular margarine||2 Tablespoon|
|Zucchini||1 Pound, unpared, cut into 1/2 inch cubes|
|Dried oregano leaves||1 Teaspoon|
|Dried basil leaves||1⁄2 Teaspoon|
|Canned tomatoes||28 Ounce, cut up (1 Can)|
|Cooked macaroni||1 Cup (16 tbs)|
|Beef bouillon cube||1|
|Grated parmesan cheese||1 Tablespoon|
Combine green pepper, onion, garlic and butter in 2-qt. glass casserole.
Microwave at high setting 4 minutes, or until tender, stirring after 2 minutes.
Stir in zucchini, oregano and basil.
Cover and microwave at high setting 6 minutes, or until zucchini is tender, stirring after 3 minutes.
Stir in tomatoes, macaroni, beef bouillon cube and pepper.
Cover and microwave at high setting 8 minutes, or until hoi stirring after 4 minutes.
Sprinkle with cheese before serving.
