Deluxe Macaroni And Cheese

Ingredients
  Small elbow macaroni 8 Ounce
  Large curd cottage cheese 2 Cup (32 tbs)
  Sour cream 1 Cup (16 tbs)
  Egg 1 , lightly beaten
  Salt 3⁄4 Teaspoon
  Black pepper 1⁄8 Teaspoon
  Dijon mustard/Prepared spicy brown mustard 2 Teaspoon
  Shredded sharp cheddar cheese 10 Ounce (2 1/2 Cup)
Directions

1. Preheat the oven to 400°F. Cook the macaroni according to package directions.
2. Meanwhile, in a large bowl, combine the cottage cheese, sour cream, egg, salt, pepper, mustard, and 2 cups of the Cheddar cheese.
3. Drain the macaroni thoroughly in a colander, and toss with the cheese mixture in the bowl. Spread the mixture evenly in a buttered 8"x8"x2" baking dish. Top with the remaining 1/2 cup of Cheddar cheese, and bake, uncovered, for 30 to 35 minutes, or until set. If the macaroni and cheese are browning too quickly, cover with aluminum foil after 20 minutes of baking.
