Rice With Lobster Sardinian Style
|Frozen lobster tails||2 Large|
|Minced onion||2⁄3 Cup (10.67 tbs)|
|Garlic clove||1 Large, minced|
|Olive oil||1⁄4 Cup (4 tbs)|
|Canned tomato puree||32 Ounce (2 Cans Of 16 Ounces Each)|
|Chopped fresh basil/1 teaspoon dried basil||1 Tablespoon|
|Honey||1 Tablespoon (Mild Variety)|
|Hot cooked rice||4 Cup (64 tbs)|
Boil lobster tails according to package directions.
Remove meat from shells and cut into chunks; set aside.
Saute onion and garlic in olive oil 5 minutes.
Stir in tomato puree, basil, honey, salt, and pepper.
Simmer sauce, covered, 45 minutes.
If sauce becomes too thick while it is cooking, stir in 1/2 cup water.
Combine lobster with rice, pour hot sauce over rice, and serve.
