Lobster Tails or Sole with Macadamia Butter
|Lobster tails||24 Ounce|
|Melted butter/Margarine||1 Tablespoon|
|Chopped macadamia nuts||1⁄4 Cup (4 tbs)|
|Watercress sprigs/Parsley sprig||1 (For Garnish)|
Split lobster tails in half lengthwise.
Drop into boiling salted water and simmer gently for 6 minutes, or until no longer translucent.
Arrange tails on a baking sheet and brush with 1 1/2 teaspoons butter.
Place under the broiler and broil until just lightly browned, about 4 to 5 minutes.
Heat remaining butter until it starts to brown; add nuts and heat slightly.
Spoon over lobster and garnish with lemon wedges and watercress.
