Lobster A La Thermidor
|Frozen lobster tails||32 Ounce|
|All purpose flour||3 Tablespoon|
|Milk||1 Cup (16 tbs)|
|Sauterne||1⁄4 Cup (4 tbs)|
|Shredded process swiss cheese||1⁄4 Cup (4 tbs)|
|Grated parmesan cheese||2 Tablespoon|
Drop frozen lobster tails into boiling, salted water to cover.
Return to boiling; simmer 10 minutes.
Drain and remove meat from shells.
Chop meat coarsely.
Set meat and shells aside.
In saucepan melt butter; blend in flour and dash pepper.
Add milk all at once.
Cook quickly, stirring constantly, till mixture is thickened and bubbly.
Add wine and Swiss cheese.
Stir till cheese melts.
Reserve 1/4 cup sauce; mix remaining sauce and chopped lobster together.
Spoon into shells.
Spread reserved sauce atop and sprinkle with Parmesan cheese.
Broil till the tops brown slightly, generally about 8 minutes.
