Crab Or Lobster Newburg

Ingredients
  Butter 6 Tablespoon
  All purpose flour 2 Tablespoon
  Light cream 1 1⁄2 Cup (24 tbs)
  Egg yolks 3
  Canned crab meat/5-ounce can lobster 7 1⁄2 Ounce, drained and broken into large pieces
  Dry white wine 3 Tablespoon
  Lemon juice 2 Teaspoon
  Paprika 1 Teaspoon
Directions

Melt butter in saucepan; blend in flou.
Add cream all at once.
Cook, stirring constantly, till sauce thickens and bubbles.
Stir small amount of hot mixture into egg yolks; return to hot mixture.
Cook, stirring constantly, till thickened.
Add crab or lobster; heat through.
Add wine, lemon juice, and 1/4 teaspoon salt.
Serve in Pastry Petal Cups or over toast points.
Sprinkle with paprika.
Pastry Petal Cups: Prepare 1 stick piecrust mix according to package directions.
Roll 1/8 inch thick; cut in 2 1/4-inch rounds.
In each of 5 muffin cups, place one round in bottom and overlap 4 rounds on sides; press together.
Prick.
Bake at 450° for 10 to 12 minutes.
Cool.
