Lobster Gumbo

Ingredients
  Butter 3 Tablespoon
  Onion 1
  Garlic 1 Clove (5 gm)
  Chopped celery 1⁄2 Cup (8 tbs)
  Cooked lobster 1 Pound
  Canned tomatoes 20 Ounce
  Okra 1⁄2 Pound
  Bay leaf 1⁄2
  Salt To Taste
  Pepper 1⁄2 Teaspoon
  Hot cooked rice 3 Cup (48 tbs)
Directions

Melt butter in deep kettle; saute onion, garlic and celery in butter for 10 minutes.
Remove garlic; add lobster, tomatoes, okra, bay leaf, salt and pepper.
Stir; add 1 quart boiling water, stirring constantly.
Cover; bring to a boil gradually.
Simmer for 40 min- utes longer.
Spoon hot gumbo over rice.
Serve at once.
