Broiled Lobster Hash
|Live lobster||2 Pound|
|Black pepper||1 Dash|
|Hashish||2 1⁄2 Teaspoon|
|Melted butter||1⁄2 Cup (8 tbs)|
Plunge live lobster into vigorously boiling water for 5 minutes.
Allow to cool sufficiently to handle.
Split down the middle.
Arrange on heavy broiler pan, meat side up.
Make mixture of butter, salt, pepper, paprika and hashish.
Spread over all of meat.
Broil, using 5000 heat, 20 minutes.
Serve at once with melted butter and lemon quarters.
