Lobster Baskets

Ingredients
  Firm white bread 1 Pound (Unsliced)
  Butter/Margarine 4 Tablespoon, molten
  Lobster meat 5 Ounce
  Pimento 1
  Mayonnaise/Salad dressing 3 Tablespoon
  Lemon juice 2 Teaspoon
Directions

GETTING READY
1. Trim the end crusts off the bread, cut the loaf crosswise into six inch-thick pieces; trim them into 3" slices and then cut further into nine small squares

MAKING
2. Hollow the squares into tiny baskets and brush them with molten butter or margarine; arrange them all on a cookie sheet
3. Bake for twelve minutes at 350°F until they turn golden; remove and allow to cool
4. Drain the lobster and pimento and chop them both finely; in a small bowl, blend together with mayonnaise or salad dressing along with lemon juice

SERVING
5. An hour before serving, spoon the lobster into breadbaskets and garnish with cucumber wedges
