Lobster Cakes With Marinated Tomatoes And Basil Oil

Ingredients
  Balsamic vinegar 5 Tablespoon
  Olive oil 2 Tablespoon
  Basil leaves 4
  Cherry tomatoes 16
  Lobster 2 Pound, cooked
  Potatoes 2 Large, boiled
  Basil leaves 3 , finely chopped
  Mayonnaise 2 Tablespoon
  All purpose flour 1 Tablespoon
  Egg 1 , beaten
  Bread crumbs 1 Cup (16 tbs)
  Oil 1 Tablespoon
  Basil oil 1 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

MAKING
1. For the marinated tomatoes, in a bowl, mix together the oil, basin leaves, vinegar, salt and pepper
2. Marinate the tomatoes and set aside for fifteen minutes
3. For the Lobster cakes, seperate the meat from the shells and cut it into medium sized cubes
4. Mix this meat with the mashed potato, mayonnaise, basil, slat and pepper
5. Give it the shape of eight cakes, dip each one in flour, then the egg and then the breadcrumbs
6. Heat oil in a skillet and keep warm

SERVING
7. Place the marinated tomatoes, then the lobsters
8. Garnish with basil leaves, basil oil and serve
