Melt butter or margarine in saucepan; blend in flour.
Add cream all at once.
Cook, stirring constantly, till mixture thickens and bubbles.
Stir small amount of hot mixture into egg yolks; return to remaining hot mixture.
Cook, stirring constantly, till thickened and bubbly.
Add crab or lobster; heat through.
Stir in wine, lemon juice, and salt.
