Ingredients
  Eggs 3 , beaten
  Cooking oil 1⁄2 Cup (8 tbs)
  Milk 1⁄2 Cup (8 tbs)
  Sifted flour 2 1⁄2 Cup (40 tbs)
  Sugar 1 Cup (16 tbs)
  Baking powder 1 Teaspoon
  Baking soda 1 Teaspoon
  Cinnamon 2 Teaspoon
  Nutmeg 1 Teaspoon
  Ginger 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Shredded carrots 2 Cup (32 tbs)
  Coconut 1 Cup (16 tbs)
  Maraschino cherries 1⁄2 Cup (8 tbs), drained
  Raisins 1⁄2 Cup (8 tbs)
Directions

Sift dry ingredients together into a large bowl.
Combine eggs, oil and milk and add to flour mixture.
Add rest of ingredients.
Turn into prepared can or cans.
Bake at 350° (large size for 1 1/2 hours and small size for about 45 minutes or until tested done).
Keeps well.
