Veal Oyster Loaf
|Oysters||1⁄2 Pint, drained|
|Ground veal||1 Pound|
|Crushed corn flakes||1 1⁄4 Cup (20 tbs)|
|Minced onion||1⁄2 Cup (8 tbs)|
|Undiluted evaporated milk||3⁄4 Cup (12 tbs)|
|Egg||1 , fork beaten|
Pick over oysters to remove any shell particles; finely chop.
(If oysters are frozen, thaw before using.) Combine oysters with ground veal, corn flakes, onion, evaporated milk, and egg and a mixture of the remaining ingredients.
Pack lightly into a greased 9x5x3-inch loaf pan.
Bake at 350Â°F about 1 1/2 hours.
To unmold, loosen loaf gently from sides of pan with a spatula.
Invert onto a hot serving platter and remove pan.
Garnish with parsley sprigs.
