|Sliced bananas||2 Large|
|Active dry yeast||1 Teaspoon|
|Cornstarch||3 Tablespoon (Cornflour)|
|Superfine sugar||3 1⁄2 Ounce|
|Butter||1 Tablespoon (For Greasing)|
Remove the pits (stones) from the dates and prunes.
Measure out 2/3 cup (150 ml1/4 pint) of orange juice and pour into a large bowl.
Add the dates and prunes.
Microwave, uncovered, on HIGH for 5 minutes, stirring half-way through.
Rinse the raisins (sultanas) under plenty of cold running water.
Pat dry on kitchen paper.
Put the apple and banana into the goblet of a food processor and add the yeast, cornstarch (cornflour), sugar and eggs.
Puree until the mixture is smooth.
Leave the cooked fruit to stand for 5 minutes.
Add the raisins (sultanas) and the banana and apple mixture.
Grease the base of an 11 inch (28 cm) long 1 1/2 quart (1.5 litre/2 3/4 pint) pyrex mold (mould).
Pour in the mixture, distributing the fruit as evenly as possible.
Microwave, uncovered, on HIGH for 12 minutes.
Leave the fruit loaf to cool in the container.
Refrigerate for at least 2 hours.
