Mardi Gras Carrot Loaf
|Cooking oil||1 1⁄4 Cup (20 tbs)|
|Sugar||2 Cup (32 tbs)|
|Grated carrots||2 Cup (32 tbs)|
|Canned crushed pineapple and juice||8 Ounce (1 Can)|
|Flour||3 Cup (48 tbs)|
|Chopped nutmeats||1 Cup (16 tbs)|
Blend cooking oil and sugar with eggs.
Beat in carrots and pineapple and juice.
Sift dry ingredients and add with vanilla and nuts.
Grease and flour 2 loaf pans.
Bake 1 hour at 350Â°.
