Apple Nut Loaf
|Dried yeast/1 cake dried yeast||1 Tablespoon|
|Sweet cider||1⁄4 Cup (4 tbs), lukewarm|
|Honey||1⁄2 Cup (8 tbs)|
|Oil||1⁄4 Cup (4 tbs)|
|Eggs||2 , beaten|
|Pure vanilla extract||1 Teaspoon|
|Orange rind||1 Tablespoon, grated|
|Whole wheat flour||2 Cup (32 tbs)|
|Apples with skin||1 Cup (16 tbs), grated|
|Nuts||1⁄2 Cup (8 tbs), coarsely chopped|
Soften yeast in cider.
Blend honey, oil, eggs, salt and flavorings.
Combine with yeast mixture.
Stir in rest of ingredients.
Turn into oiled loaf pan.
Set in warm place to rise for 30 minutes.
Bake at 350Â° F., about 40 minutes.
