Sherry Holiday Loaf

Ingredients
  Pecans 3 Cup (48 tbs), halved
  Glace cherries 4 Ounce
  Pineapple 4 Ounce
  Dates 1⁄2 Pound, pitted and chopped
  Flour 3⁄4 Cup (12 tbs)
  Sugar 3⁄4 Cup (12 tbs)
  Baking powder 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Eggs 3 , beaten
  Vanilla 1 Teaspoon
  Sherry wine 1 Tablespoon
Directions

Mix fruit and nuts.
Sift together flour, sugar, baking powder and salt.
Mix eggs and vanilla into flour mixture.
Stir in fruits and nuts until well blended.
Pour into 2 foil loaf pans.
Bake one hour and 30 minutes at 300 degrees.
When cool, pierce top with fork or tester and pour Sherry wine over.
If made in advance, cover with cheesecloth and keep moist with Sherry.
Freezes well.
