Jellied Vegetable Loaf
|Unflavored gelatin||2 Tablespoon|
|Water||3 Cup (48 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Lemon juice||1⁄2 Cup (8 tbs)|
|Sliced radishes||1⁄2 Cup (8 tbs)|
|Grated carrots||1⁄2 Cup (8 tbs)|
|Shredded cabbage||2 Cup (32 tbs)|
|Diced green pepper||1⁄2 Cup (8 tbs)|
Sprinkle gelatin into 1 cup water in saucepan.
Place over medium heat until gelatin is dis solved, stirring constantly.
Remove from heat; add sugar and salt, stirring until sugar is dissolved.
Stir in remaining water and lemon juice.
Chill until mixture is slightly thickened; fold in remaining ingredients.
Turn into 9 x 5 x 3 inch loaf pan; chill until firm.
Unmold; serve with cucumber sauce.
