Christmas Fruit Loaf

Ingredients
  Hot roll mix 1 Cup (16 tbs)
  Preserved diced mixed fruit 1⁄2 Cup (8 tbs)
  Chopped walnuts 1⁄2 Cup (8 tbs)
  Grated lemon rind 1 Teaspoon
Directions

Prepare hot roll mix as directed, but blend in fruit, nuts and lemon rind with the flour mixture.
Let rise until double in bulk.
Turn out on floured surface and knead for 1 minute.
Shape in loaf and transfer to greased 9 x 5-inch loaf pan.
Let rise again.
Bake for 45 minutes at 375° F.
Spread confectioners' sugar icing over top while warm.
