Chard Egg Loaf
|Carrots||2 , grated|
|Onion||1 Medium, minced|
|Chopped swiss chard||2 Cup (32 tbs), cooked|
|Eggs||6 , beaten|
|Dried oregano||1⁄2 Teaspoon|
|Dried thyme||1⁄2 Teaspoon|
1) Heat oven to 350°F.
2) In a large skillet, saute carrots and onion in oil until tender.
3) Add chopped chard.
4) Stir eggs into vegetables, add seasonings, and mix well.
5) In the greased loaf pan, pour the mixture, dot with butter, and bake 40 to 45 minutes, or until eggs are set.
6) Serve the warm egg loaf as side dish.
