Banana Bran Loaf
|Mashed ripe bananas||1 Cup (16 tbs) (About 2 Large)|
|Sugar||1⁄2 Cup (8 tbs)|
|Liquid vegetable oil/Margarine||1⁄3 Cup (5.33 tbs)|
|Skim milk||1⁄3 Cup (5.33 tbs)|
|All purpose flour||1 1⁄4 Cup (20 tbs)|
|Bran hot cereal||1 Cup (16 tbs), uncooked (Quaker Oat)|
|Baking powder||2 Teaspoon|
|Baking soda||1⁄2 Teaspoon|
Heat oven to 350°F.
Lightly spray 8 X 4-inch or 9 X 5-inch loaf pan with vegetable oil cooking spray or oil lightly.
Combine bananas, sugar, margarine, egg whites and milk; mix well.
Add combined flour, oat bran, baking powder and baking soda, mixing just until moistened.
Pour into prepared pan.
Bake 55 to 60 minutes or until wooden pick inserted in center comes out clean.
Cool 10 minutes in pan; remove to wire rack.
