Frugal Bean Loaf

Ingredients
  Beans/Navy /other 2 Cup (32 tbs)
  Bacon grease 3 Tablespoon
  Stewed tomatoes 1 Cup (16 tbs)
  Chopped green pepper 1
  Chopped onion 1
  Eggs 2
  Herbs 3 Tablespoon (Of Your Choice)
  Salt To Taste
Directions

Soak beans overnight.
Cook beans with desired herbs and salt, 1-2 hours or until tender.
Add 3 tablespoons bacon grease, 1 cup stewed tomatoes, chopped green pepper, and onion.
Mix mashed beans, tomatoes, and stir in 2 well-beaten eggs.
Form into loaf pan.
Bake in 325-350 degree-oven for 1 hour.
Serve hot or cold.
This recipe was conceived during the early 1900's when women were active in local and national women's suffrage campaigns.
This recipe also applies to the now-a-days "meatless meals."
