Fruit Loaf With Strawberry And Apple Spread

Ingredients
  Porridge oats 6 Ounce (175 Gram)
  Muscovado sugar 3 1⁄2 Ounce (100 Gram)
  Ground cinnamon 1 Teaspoon
  Sultanas 4 1⁄2 Ounce (125 Gram)
  Seedless raisins 6 Ounce (175 Gram)
  Malt 2 Tablespoon
  Unsweetened apple juice 1⁄2 Pint (300 Milliliter)
  Self rising flour 6 Ounce (175 Gram)
  Baking powder 1 1⁄2 Teaspoon
  Strawberries 1 Cup (16 tbs)
  Strawberries 8 Ounce, washed and hulled (225 Gram)
  Eating apples 2 , cored, chopped
  Unsweetened apple juice 300 Milliliter
Directions

GETTING READY
1)Preheat oven to 350 degrees F or 180 degrees C or Gas Mark 4.
2)Take a loaf tin of size 900g or 2 lb. Smear with low fat and line it .

MAKING
3)In a bowl, take porridge oats, cinnamon, sugar, raisins, sultanas and malt extract. Add the apple juice and stir. Let soak for half hour.
4)Into the bowl, add sifted baking powder and flour. Add in the husks too that are retained by the sieve.
5)Transfer mixture into pan and bake for 90 minutes until firm and done.
6)Let stand to cool for 10 minutes and them transfer onto rack and let cool thoroughly.
7)In a pan, add strawberries, apples and apple juice. Bring to boil and simmer covered for half hour.
8)Mix the sauce and transfer into warmed jar. Cool, seal and label.

SERVING
9)Spread fruit mix over loaf and serve with strawberries and apples.
