Brandied Apple Loaf

Ingredients
  Graham cracker crumbs 1 Cup (16 tbs)
  Brandy 1⁄4 Cup (4 tbs)
  Peeled chopped apple 2 Cup (32 tbs)
  Raisins 1⁄2 Cup (8 tbs)
  Chopped walnuts 1⁄2 Cup (8 tbs)
  All purpose flour 1 1⁄2 Cup (24 tbs)
  Whole wheat flour 1 1⁄2 Cup (24 tbs)
  Baking soda 3⁄4 Teaspoon
  Baking powder 3⁄4 Teaspoon
  Salt 1⁄2 Teaspoon
  Packed dark brown sugar 3⁄4 Cup (12 tbs)
  Shortening 1⁄2 Cup (8 tbs)
  Apple juice 3⁄4 Cup (12 tbs)
  Eggs 2
  Butter/Margarine 1⁄4 Cup (4 tbs), softened
Directions

Generously grease two 8 x 5-in loaf dishes.
Coat bottom and sides of each dish with graham cracker crumbs.
Place brandy in small bowl.
Microwave at High 30 to 45 seconds, or until warm.
Stir in apple, raisins and walnuts.
Set aside.
In large mixing bowl combine remaining ingredients.
Beat at medium speed of electric mixer 3 minutes, or until blended, scraping bowl constantly.
Stir in apple mixture.
Spread equally in dishes.
Shield ends of dishes with foil.
Place one loaf at a time in oven on saucer.
Microwave at 50% (Medium) 6 minutes.
Remove shielding.
Increase power to High.
Microwave 2 to 6 minutes, or until top springs back when touched lightly and no unbaked batter appears through bottom of dish.
Let stand on counter 5 to 10 minutes.
Loosen edges.
Invert on wire rack; cool.
Wrap each loaf.
Label and freeze no longer than 1 month.
To serve, unwrap and place one loaf on plate.
Microwave at 50% (Medium) 3 1/2 to 5 1/2 minutes, or until wooden pick can be easily inserted in center.
Let stand 5 minutes.
