Sophisticated Salmon Patties or Salmon Loaf
|Flaked cooked salmon||2 Cup (32 tbs) (fresh)|
|Smoked salmon||1⁄4 Pound, coarsely chopped|
|Mashed potatoes||3⁄4 Cup (12 tbs) (2 medium size)|
|Onion||1 Small, finely chopped|
|Chopped fresh parsley||1 Tablespoon|
|Fresh lemon juice||1 Tablespoon|
|Chopped fresh dill/1 teaspoon dried dill||1 Tablespoon|
|Freshly ground black pepper||1⁄4 Teaspoon|
|Egg||1 , slightly beaten|
|Light cream||1⁄4 Cup (4 tbs)|
|Sweet butter||2 Tablespoon|
1. In a large bowl, combine fresh and smoked salmon, potatoes, onion, parsley, lemon juice, dill and pepper.
2. Combine egg and cream; stir into salmon mixture; mix well.
3. Divide into four portions and shape into burgers with hands.
4. In a large skillet, heat butter and add burgers; cook, turning once, for 8 to 10 minutes, until golden brown.
