Blueberry Orange Loaf
|Baking soda||1⁄2 Teaspoon|
|Baking powder||2 Teaspoon|
|All-purpose flour||2 Cup (32 tbs), sifted|
|Sugar||3⁄4 Cup (12 tbs)|
|Grated orange rind||1 Tablespoon|
|Orange juice||1⁄4 Cup (4 tbs)|
|Melted butter||1⁄4 Cup (4 tbs)|
|Milk||3⁄4 Cup (12 tbs)|
|Egg||1 , beaten|
|Blueberries||1 Cup (16 tbs), drained and dried (Fresh / Frozen)|
|Chopped nuts||1⁄2 Cup (8 tbs)|
Sift first five ingredients into a bowl.
Combine the next five ingredients and stir into the flour mixture.
Grease a 9 x 4 x 3-inch pan and spread with 1/3 batter.
Sprinkle with 1/2 the blueberries and nuts.
Add another 1/3 batter, remaining fruit and nuts, remaining batter.
Bake at 350F for 50 minutes.
Frost when cool, if desired.
