Salmon Rice Loaf
|Onion||1⁄4 Cup (4 tbs), chopped|
|Celery||1⁄3 Cup (5.33 tbs), chopped|
|Salmon||1 Can (10 oz), drained, flaked|
|Cooked rice||1 Cup (16 tbs)|
|Eggs||2 , beaten|
|Parsley flakes||1 Teaspoon, dried|
|Lemon juice||1 Teaspoon|
1. Place butter, onion and celery in medium glass mixing bowl.
2. Microwave for 2 to 3 minutes on high, or until vegetables are partly cooked. Add remaining ingredients; mix well. Pat into 9x5 glass loaf dish. Cover with wax paper.
3. Microwave for 10 to 14 minutes on med.high (Roast), or until hot in center (about 160° F). Let stand, covered, 5 minutes before serving.
