Banana Nut Loaf
|All purpose flour||2 Cup (32 tbs)|
|Baking powder||2 Teaspoon|
|Baking soda||1⁄4 Teaspoon|
|Shortening||1⁄2 Cup (8 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Orange peel||1 Teaspoon, grated|
|Banana||1 Cup (16 tbs), mashed|
|Pecans||1⁄2 Cup (8 tbs), chopped (or walnuts)|
Stir thoroughly the first 4 ingredients.
Cream shortening and sugar till light and fluffy.
Add eggs and peel; beat well.
Combine banana and milk; add to creamed mixture alternately with flour mixture, beating just till smooth after each addition.
Stir in nuts.
Turn into greased 9x5x3-inch loaf pan.
Bake at 350° for 45 to 50 minutes.
Wrap; store overnight.
