Thursday's Wild Beef N Vegetable Loaf

Ingredients
  Lean ground beef 1 1⁄2 Pound
  Carrots 2 Medium, shredded
  Onion 1 Small, finely chopped
  Eggs 2
  Soft bread crumbs 1 Cup (16 tbs)
  Tomato juice 1⁄2 Cup (8 tbs)
  Worcestershire sauce 1 Tablespoon
  Salt 1 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Barbecue sauce 1 Cup (16 tbs)
  Long grain and wild rice 6 Ounce (1 Package)
  Water 2 1⁄2 Cup (40 tbs)
  Butter/Margarine 1 Tablespoon
Directions

Preheat oven to 350°F (177°C).
Combine beef, carrots, onion, eggs, bread crumbs, tomato juice, Worcestershire sauce, salt and pepper.
Mix well.
Press into an 8-1/2" x 4-1/2" x 2-5/8" loaf pan.
Bake until meat is done, about 1 hour and 10 minutes.
Cook contents of rice and seasoning packets with water and butter or margarine according to package directions.
Ten minutes before end of meat loaf's baking time, spoon barbecue sauce or catsup over meat loaf and finish baking.
