Banana Date Loaf
|Whole wheat flour||1 1⁄4 Cup (20 tbs)|
|All purpose flour||1 Cup (16 tbs)|
|Baking powder||2 Teaspoon|
|Baking soda||1 Teaspoon|
|Ground nutmeg||1⁄2 Teaspoon|
|Sugar||1⁄2 Cup (8 tbs)|
|Mashed ripe banana||1 Cup (16 tbs)|
|Skim milk||1⁄2 Cup (8 tbs)|
|Vegetable oil||1⁄4 Cup (4 tbs)|
|Egg||1 , lightly beaten|
|Finely chopped dates||1⁄2 Cup (8 tbs)|
|Vegetable cooking spray||1 Tablespoon|
Combine first 7 ingredients in a medium bowl; make a well in center of mixture.
Combine mashed banana, milk, vegetable oil, and egg; add to dry ingredients, stirring just until dry ingredients are moistened.
Stir in chopped dates.
Spoon batter into a 9- x 5- x 3-inch loafpan coated with cooking spray.
Bake at 350° for 45 to 55 minutes or until a wooden pick inserted in center comes out clean.
Let cool in pan 10 minutes; remove from pan, and let cool on a wire rack.
