Cherry Nut Loaf
|Sifted all purpose flour||2 Cup (32 tbs)|
|Sugar||1 Cup (16 tbs)|
|Baking powder||3 Teaspoon|
|Maraschino cherry juice||1⁄4 Cup (4 tbs)|
|Milk||3⁄4 Cup (12 tbs)|
|Cooking oil||3 Tablespoon (Salad Oil)|
|Almond extract||1⁄4 Teaspoon|
|Maraschino cherries||1 Cup (16 tbs), drained and cut into halves|
|Chopped walnuts||1⁄2 Cup (8 tbs)|
Heat oven to 350 degrees.
Grease a 9 x 5 x 3-inch loaf pan.
Sift flour, sugar, baking powder and salt together into mixing bowl.
Beat eggs, cherry juice, milk, oil and almond extract together with a fork.
Stir into dry ingredients and beat hard until smooth, about 30 seconds.
Stir in cherries and nuts.
Spoon into prepared pan.
Bake about 1 hour or until a toothpick inserted in centre comes out clean.
