Gourmet Veal Loaf

Ingredients
  Ground veal 1 1⁄2 Pound
  Grated raw carrots 2 Cup (32 tbs)
  Onion 1 Small, chopped
  Canned chopped mushrooms 4 Ounce (1 Can)
  Fine dry bread crumbs 1⁄2 Cup (8 tbs)
  Salt 1 Teaspoon
  Pepper 1⁄4 Teaspoon
  Dairy sour cream 8 Ounce (1 Cup / 1 Container)
Directions

1. Combine all ingredients in large bowl; mix lightly with fork; spoon into loaf pan, 9x5x3-inches; invert onto shallow pan; carefully remove loaf pan; score top of loaf lightly.
2. Bake in moderate oven (375°) for 1 hour and 15 minutes or until rich golden brown on top.
3. For party serving, place loaf on plank or ovenproof platter; edge with mashed potatoes, and tomato halves brushed with a parsley-butter sauce; broil for 10 minutes or until potatoes are light brown.
