Country Beef Loaf

Ingredients
  Butter/Margarine 2 Tablespoon
  Mushrooms 1⁄2 Pound, trimmed and sliced
  Onion 1 Large, diced
  Thinly sliced celery 1 Cup (16 tbs)
  Shredded pared carrots 1 Cup (16 tbs)
  Water 2 Tablespoon
  Ground beef 2 Pound
  All purpose flour 1⁄2 Cup (8 tbs)
  Salt 2 Teaspoon
  Seasoned salt 1 Teaspoon
  Fine herbes 1 Teaspoon
  Soy sauce 2 Tablespoon
Directions

1. Combine butter or margarine, mushrooms, onion, celery, carrot and water in a medium-size frying pan; heat to boil; cover. Cook 10 minutes or until vegetables are crisply tender.
2. Combine ground beef, flour, salt, seasoned salt, fine herbes, soy sauce and cooked vegetable mixture in a large bowl; mix lightly until well-blended. Shape into a rectangular loaf, 8x6, in a greased jelly-roll pan.
3. Bake in moderate oven (350°) for 1 hour, or until crusty-brown. Sprinkle with chopped parsley before serving, if you wish.
