Perch Loaf

Ingredients
  Eggs 2 , separated
  Green pepper 1⁄2 , minced
  Onion 1 Tablespoon, minced
  Walnuts 1⁄2 Cup (8 tbs), chopped
  Fine dry bread crumbs 1 Cup (16 tbs)
  Lemon juice 2 Teaspoon
  Milk 1⁄2 Cup (8 tbs)
  Salt 1⁄8 Teaspoon
  Perch fillets 2 Cup (32 tbs), cooked and flaked
Directions

Beat yolks, combine all ingredients, folding in beaten egg whites last.
Spoon mixture into loaf pan.
Set pan into larger pan of hot water and bake 350°F.60 minutes.
Turn loaf out onto hot platter.
Garnish with lemon slices and sprigs of parsley.
