Cheese And Nut Loaf

Ingredients
3 tablespoons vegetable oil
1 onion, chopped
1 1/2 cups chopped celery
1 cup chopped cashews
1 cup chopped walnuts
2 cups cooked brown rice
2 cups (1 pound) cottage cheese
2 tablespoons chopped chives
1/4 cup toasted sesame seeds
1/4 cup chopped parsley
1/2 teaspoon dried thyme
Salt to taste
3 eggs, lightly beaten
1/4 cup wheat germ
Directions

1. Preheat the oven to 375 degrees.
2. Heat the oil in a skillet and saute the onion until tender. Add the celery and cook for 5 minutes longer.
3. Combine the cashews, walnuts, rice, cottage cheese, chives, sesame seeds, parsley, thyme, salt, and eggs in a large bowl. Stir in the cooked onion mixture.
4. Oil a 9- by 5- by 3-inch loaf pan and dust generously with wheat germ. Turn the cheese-rice-nut mixture into the pan and sprinkle the remaining wheat germ over the surface. Bake for 1 hour.
