Pecan Cheese Loaf
|Pecans||1 Cup (16 tbs), chopped|
|Natural cheddar cheese||1 Cup (16 tbs), grated|
|Whole wheat germ||1⁄2 Cup (8 tbs)|
|Soy grits||1⁄4 Cup (4 tbs), soaked in 1 /2 c stock for 15 minutes|
|Sea salt||3⁄4 Teaspoon|
|Grated onion||1 Teaspoon|
|Minced parsley||1 Teaspoon|
|Eggs||2 , beaten|
Combine all ingredients except wheat germ.
After well mixed, then stir in the wheat germ.
Turn into loaf pan.
Bake at 350° for 30 minutes.
Serve with mushroom sauce made by sauteing 1/4 pound mushroom caps in 2 tablespoons corn germ oil and then adding 2 tablespoons wholewheat flour, 1/2 teaspoon salt, dash of nutmeg and a half cup each of milk and cream.
Cook until smooth and thick.
