Coconut Fruit Loaf
|Dried fruit||6 Ounce|
|Brown sugar||1 Ounce (For topping)|
|Coconut||1 Ounce (For topping)|
|Margarine||1 Ounce (For topping)|
|Walnuts||1 Ounce (For topping)|
Add fruit to basic mixture.
No extra liquid is required.
Put into loaf tin.
Make topping by creaming sugar with margarine, adding coconut and finely chopped walnuts.
Spread on top of loaf.
Bake for about 1 hour in the centre of a moderate oven (375 °F.-Gas Mark 4).
This delicious loaf is excellent for carrying on a picnic.
