  Onion 1 , chopped
  Garlic 1 Clove (5 gm), minced
  Green pepper 1⁄3 Cup (5.33 tbs), chopped
  Celery 1⁄3 Cup (5.33 tbs), chopped
  Carrot 1⁄2 Cup (8 tbs), shredded
  Oil 1 Tablespoon
  Soy grits 3 Tablespoon
  Tomato juice 2⁄3 Cup (10.67 tbs)
  Ground beef 1 Pound
  Ground beef heart 2⁄3 Pound
  Egg 1 , beaten
  Wheat germ 1⁄4 Cup (4 tbs)
  Nutritional yeast 2 Tablespoon
  Soy flour 2 Tablespoon
  Chopped parsley 3 Tablespoon
  Catsup 2 Tablespoon
  Salt 1⁄3 Teaspoon
  Pepper 1⁄3 Teaspoon
  Thyme 1⁄3 Teaspoon
  Basil 1⁄3 Teaspoon

Saute onion, garlic, green pepper, celery and carrot in oil.
Soak soy grits in tomato juice for about 15 Combine meat, egg, wheat germ, nutritional yeast, soy flour, parsley, catsup and seasonings.
Add sauteed vegetable mixture and the soy grits and tomato mixture.
Mix well.
Oil 9 x 5 x 3 inch loaf pan, bottom and sides, and press meat mixture into pan.
Bake at 350°F. for 1 hour or until meat is cooked at center.
Turn out of loaf pan, slice, serve.
