Liver Balls

Ingredients
  Minced onion 3 Tablespoon
  Melted chicken fat 2 Teaspoon
  Chicken livers 1⁄2 Pound
  Kosher salt 1 Teaspoon
  Pepper 1⁄8 Teaspoon
  Potato flour 2 Tablespoon
  Egg yolk 1
  Egg white 1 , stiffly beaten
Directions

MAKING
1) In a large frying pan, pour in the fat and saute the onion till evenly browned
2) In a grinder, grind the liver and browned onions
3) Add in the salt, pepper, potato flour and the egg yolk
4) Fold in the stiffly beaten whites
5) Into a boiling soup of salted water, drop heaped spoonfuls of the mixture
6) Allow to cook for 15 minutes till they rise to the top

SERVING
7) Serve the liver ball on a platter with some dips
