Kidney Or Liver Soup

Ingredients
  Kidney/Liver 1 Pound
  Stock 2 Pint
  Salt 2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Onions 1⁄2 Cup (8 tbs)
  Carrot 1⁄2 Cup (8 tbs)
  Celery 1⁄2 Cup (8 tbs)
  Dripping 1 Ounce
  Flour 1 Ounce
Directions

GETTING READY
1.Cut the kidney or liver and soak it in cold water for 10 minutes.
2.Once done, wash and take off the skin, core and pipes.
3.Cut the kidney or liver into fine pices.
4.Slice onion,carrots and celery.

MAKING
5.In a pan heat the fat and fry meat until dark.
6.Take the meat out and fry onions in the same pan.
7.Remove any surplus fat.
8.Add sliced vegetables, meat, stock and salt and pepper to it and let the mixture boil.
9.Once done, cook on low flame for 11/2- 2 hours so that the meat is soft.
10.Keep some of the meat in the soup for garnishing.
11.Reheat the soup, and add flour to it.
12.Cook well by stirring for 5 minutes.

SERVING
13.Serve the soup hot with a garnish of chopped meat pieces.
