Fried Liver

Ingredients
  Calf liver 1 Pound, cut into narrow strips
  Soy sauce 2 Tablespoon
  Sherry 1 Tablespoon
  Sugar 1⁄2 Teaspoon
  Cornstarch 1 Tablespoon
  Water 1 Tablespoon
  Oil/Lard / chicken fat 6 Tablespoon
  Scallions 12 , thinly sliced
  Salt 1 Teaspoon
  Pepper 1⁄4 Teaspoon
Directions

MAKING
1) In a bowl, toss the liver with the soy sauce, sherry, sugar, cornstarch and water.
2) Let the liver marinate for 5 minutes.
3) In a skillet heat fat and sauté the liver for 3 minutes, stirring frequently.
4) Add the scallions (reserve 1 tablespoon for garnish) and simmer for 3 minutes.
5) Season with the salt and pepper.

SERVING
6) Serve hot garnished with the reserved scallions
