Liver Sausage With Orange

Ingredients
  Unsalted butter 4 Ounce
  Liver sausage 12 Ounce (Good Quality)
  Garlic 1 Clove (5 gm)
  Medium dry sherry 1⁄2 Cup (8 tbs)
  Heavy cream 2 Tablespoon
  Black pepper 1⁄2 Teaspoon
  Salt 1 Teaspoon
  Orange juice 1 Tablespoon
  Orange rind 1 Tablespoon, grated
  Orange slice 3
Directions

MAKING
1. In a mixing bowl, cream the butter with a wooden spoon until just soft, not molten; add liver sausage
2. Press a peeled garlic through a press into the mixture
3. Blend sherry cream, pepper, salt, orange juice and rind into the mixture and beat them together until well combined
4. Place spoonfuls of this mixture into six individual ramekins, four ounces each in size
5. Halve the orange slices and use them to garnish the ramekins
6. Set in the refrigerator for half an hour before serving

SERVING
7. Serve chilled
